Produced from raw milk, this semi-poured cheese has the shape of a disc weighing about 10 kg with a concave heel, 40 cm in diameter and 7 to 8 cm high. The crust is brown with a net appearance, while the dough is soft and melty, varying in color from ivory to pale yellow. The taste is fruity, with delicate notes of hazelnut, pineapple or citrus fruits.

The optimal ripening period is at least 100 days, with the recommended 4 months. It contains a minimum of 45% fat on a dry basis, or 33% in relation to the total weight.
