Unpasteurized Camembert de Normandie Appellation d'Origine Contrôlée (AOC) is a delicious cheese with a firm rind, soft creamy texture and rich flavor. To qualify for the AOC designation, the milk must come from cows in the Normandy region and remain unpasteurized, and the cheese itself must be matured within Normandy.

Some of the larger Camembert producers have decided not to use raw milk in the production of their cheeses, so they no longer qualify for the AOC de Normandie label.
